Dahi baingan is a yummy and delicious traditional recipe of Odisha. The main ingredient of this recipe is Yoghurt or dahi and eggplant. We the people of Odisha generally prepared this dish on any festival as this dish don't require onion and garlic to prepare.
Steps

Wash and cut the eggplants.

Heat a pan with oil and saute the brinjal/baingan/ eggplant with salt, turmeric and chilli powder till they become soft and become golden brown in colour.

Blend the curd with salt, sugar ginger chilli paste and roasted cumin and red chilli powder.

Add fried baingan in it.

In a tadka pan heat 1 tsp oil and then add punch phoran, chilli and curry leaves in it.When they crackle then add this to the curd.

Your dahi baingan is now ready. Serve it with rice.
