Meethi roti Gur wali Roti

As a kid I used to get to eat this mithi roti whenever someone used to get gulab jamuns for us. I wasn’t too fond of Gulab Jamuns to I used to eagerly wait for them to get over. Why..? because once the Gulab Jamuns were over my mum used to use the left over chashni (sugar syrup) to make mithi rotis. I was in love with these rotis. They were soft and hard at the same time. I used to take them in my lunch till they lasted. However as I grew up I reduced my sugar intake due to health reasons, so I replaced sugar with Jaggery. It still tastes yum and makes for an amazing snack. It stays good for 5-6 days. you can carry it alsong for trips as well.

Ingredients

Soak: 1-2 hrs, prep: 10 mins, cook: 20-25 mins
3-4 servings
  1. 2 cupAtta (wheat flour)
  2. 1 cupgrated Gud/ jaggery
  3. 180 mlwater
  4. 1 tspsaunf/ fennel seeds (crushed coarsely)
  5. as neededghee for roasting

Steps

Soak: 1-2 hrs, prep: 10 mins, cook: 20-25 mins
  1. 1

    Soak the jaggery in water and let it mix well. You can also heat up the water to fasten the process. But then make sure to cool the mixture before using.

    In a big bowl mix wheat flour and ghee nicely. Now add the crushed saunf and jaggery water. Knead to a stiff dough. Make equal sized balls of the dough and roll it out using some dry flour. Do not make a thin chapatti keep it thick, approximately 6-7 mm.

    Heat a tawa/ girdle, and roast the roti on low flame using a little ghee.

  4. 4

    Cook nicely on both sides till done. It takes about 4-6 minutes for one roti to cook since it is thick.

  5. 5

    Cool and store. Stays good for about 5 days.
