Tuscan Minestrone, My Way

With these slightly rainy days and plenty of vegetables to use up, a nice minestrone is just perfect. This might even be the last one of the winter season, so it's a great time to enjoy it—especially if you love vegetables like I do. Tuscan minestrone is really flavorful and delicious. I left out the guanciale, cannellini beans, and pasta because I prefer it this way, served with toasted bread brushed with garlic. But you can add them to make it even more amazing.

Chop all the vegetables into cubes, except for the savoy cabbage, lacinato kale, and Swiss chard, which you should slice into strips.

Place all the vegetables in a pot with 6 1/3 cups water (about 1.5 liters). Cook until all the vegetables are tender.

Season with salt and pepper to taste. Add a vegetable bouillon cube if you like.

Serve with toasted bread brushed with garlic and sprinkle with a little Pecorino cheese.
