Part of Yui and I’s weekly rustle up of store cupboard ingredients! I used pasta, Yui used noodles and we did a switch-a-roo of some of the ingredients like I used ancho chilli flakes Yui used Thai Chillis etc ! But shows just what you can make out of your cupboard! Simply just use mushrooms if you want to make it veggie!

Ingredients

2 people
  • 150 gramspasta
  • 1small red onion sliced
  • Olive oil
  • 1-2 tinstuna or salmon
  • 2 clovesdiced garlic
  • 1 handfulHerbs fresh of dried
  • Chilli / either dried or fresh
  • Rind and juice of a lemon
  • A fewmushrooms sliced
  • Hand full of spinach I used two blocks of frozen spinach
  • 1 tbspcapers
  • Sweet chilli sauce optional
  • Wedge of lemon to serve
  • to tasteSalt and pepper

Steps

  1. 1

    Heat a pan of water add salt and once boiling throw in the pasta for 10 - 12 minutes.

  2. 2

    Whilst the pasta is boiling chop the veggies! When chopped pour in some olive oil in a large pan, heat it and throw in the red onion first for it to soften.

  3. 3

    Next add the garlic and mushrooms. Give a stir if need be add more oil and the rest of the veggies, herbs and spices.

  4. 4

    Once the pasta is cooked drain and throw into the veggies. Grate the lemon and squeeze over the juices.

  5. 5

    Mix together well and finely add the tuna mixing it in but keeping it in chunks. I finely drizzled sweet chilli sauce over and served with a wedge of lemon. Season well!
