I think at some point our grandmothers made this soup for us as kids. Now that I have my little girl, I decided to make it for her just like my grandma made it for me. ❤️

Sort and rinse the beans.

In a large pot, cook the beans with 4 cups (1 liter) of water, the onion, salt, bouillon, and oil. Cook on high heat for up to 1 1/2 hours (add more water if needed).

Cook the rice. For each cup of rice, use 2 cups of water. Do not add anything else, just water. Cook for up to 15 minutes.

Boil the eggs in water for up to 15 minutes on high heat.

Crumble or shred the cheese.

Once the eggs are cooked, peel and slice them.

When everything is ready, serve in a deep bowl: add beans, rice, cheese, egg, and pour some of the bean broth over. Top with crema and finally add the tortilla chips. ❤️
