Ingredients

60 minutes
Serves 4 servings
  1. 1 lb (500 grams)dried beans
  2. 1 cuprice (about 200 grams)
  3. 2 tablespoonsoil (about 30 ml)
  4. 1/4onion (white or red, either is fine)
  5. Salt, to taste
  6. 1/2chicken bouillon cube (or 1 tablespoon if using powder)
  7. Tortilla chips, as needed (you can cut tortillas into strips and fry them, or use chopped warm tortillas if you prefer)
  8. Queso fresco or Oaxaca cheese, to taste
  9. Mexican crema, to taste
  10. Hard-boiled eggs, to taste (optional)

    Sort and rinse the beans.

  2. 2

    In a large pot, cook the beans with 4 cups (1 liter) of water, the onion, salt, bouillon, and oil. Cook on high heat for up to 1 1/2 hours (add more water if needed).

    Cook the rice. For each cup of rice, use 2 cups of water. Do not add anything else, just water. Cook for up to 15 minutes.

    Boil the eggs in water for up to 15 minutes on high heat.

    Crumble or shred the cheese.

  6. 6

    Once the eggs are cooked, peel and slice them.

  7. 7

    When everything is ready, serve in a deep bowl: add beans, rice, cheese, egg, and pour some of the bean broth over. Top with crema and finally add the tortilla chips. ❤️
