On a lazy day, I whipped up this quick dry hu tieu noodle dish. The soul of this dish is definitely the rich, flavorful sauce that makes it irresistible!

Simmer the pork spare ribs with carrots and daikon radish to make a broth. Season to taste.

Marinate the ground pork with finely chopped shallots, seasoning powder, and black pepper. Sauté until cooked through.

For the sauce: Mix 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 tablespoon rice vinegar, and 3 tablespoons sugar. Sauté minced shallots and garlic in a pan until fragrant, then add the sauce mixture, stir well, and remove from heat.

For garlic oil: Heat 1 tablespoon cooking oil in a pan. When hot, add minced garlic and fry until golden and fragrant. (The more fried garlic, the better!)

Blanch the hu tieu noodles and bean sprouts, then place them in a bowl. Add 2 tablespoons garlic oil and toss to keep the noodles from sticking. Next, add 3 tablespoons of the sauce and mix well. Top with sautéed pork and add garlic chives if desired. Sprinkle with fried shallots and black pepper. Serve with a bowl of the pork rib broth.
