110 gUnsalted Butter
170 gCaster Sugar
80 gLight Brown Sugar
189 gPlain Flour
1Egg
Fine Salt (level 2.5ml spoon)
100 gDark Choc Chips

Make sure butter is at room temperature/melts to touch. On low speed mix in both sugars. Next add the add and whisk for about 15 seconds.

Sieve in flour and sugar, gently mix in 🥄

Add choc chips and mix by hand 🖐️. Then split mixture into 10 evenly sized balls.

Press each ball of mix down slightly on a greased baking tray. Leave plenty of room for the mixture to spread out. Bake for 10-13min in the centre of the oven.

Remove from oven when golden. Leave on tray to cool a little (they will break up if moved when too warm).

Biscuits will be crunchy on the outside and chewy in the middle.

I love the simple things, like food that reminds me of being a kid, or making something from nothing, which in our house, is known as Fridge Tapas.Salt and garlic make everything tasty.I do love a bit of Sangria or a Pina Colada 🍍 🍹
