Ingredients

  • 7–10 oz (200–300 grams) ground pork, or as desired
  • 1 cup(about 50 grams) fresh glass noodles, cut into 2-inch pieces
  • 1/2 cup(about 40 grams) shredded cabbage
  • 1/2 cup(about 40 grams) bean sprouts
  • 1/2 cup(about 35 grams) finely chopped carrot
  • 1/2 cup(about 35 grams) shiitake mushrooms, diced small
  • 1/2 cup(about 35 grams) wood ear mushrooms, chopped (optional)
  • 1/2 cup(about 60 grams) firm tofu, sliced
  • 1/2 cup(about 50 grams) fish sausage (optional)
  • 1/2 tablespoon(about 7 grams) 'Three Friends' paste (cilantro root, garlic, black pepper)
  • 1–2 tablespoons (15–30 ml) mushroom soy sauce
  • 1–2 tablespoons (15–30 ml) oyster sauce
  • 1–2 pinches pink salt
  • Granulated sugar or stevia, to taste
  • Spring roll wrappers
  • 1 tablespoon (15 ml)oil for stir-frying
  • Palm oil or coconut oil for frying
  • 1 tablespoon (8 grams)cornstarch
  • 1little water
  • Sweet chili sauce

Steps

    Marinate the ground pork with a little mushroom soy sauce and set aside.

  2. 2

    Slice the tofu lengthwise, then grill in a nonstick pan until golden and crispy outside but soft inside. Cut into cubes or strips as you like and set aside.

    Fry or bake the fish sausage, then cut into cubes (optional).

  4. 4

    Clean and finely slice the mushrooms and vegetables as desired. Set aside.

    Pound the 'Three Friends' (cilantro root, garlic, black pepper) into a fine paste and set aside.

    Remove the spring roll wrappers from the freezer and let them sit at room temperature for about 30 minutes. Separate the wrappers one by one. Do not leave them exposed to air or they will dry out and crack. Cover with a damp (not wet) cheesecloth or kitchen towel.

    (Tip: Large spring roll wrappers are easier to use, but you can cut them in half for smaller rolls if you prefer.)

    Some people use egg white to seal the wrappers, but I use 1 tablespoon cornstarch mixed with a little water. Heat gently, stirring quickly in one direction for less than 3 minutes until it turns clear. This makes a great glue for sealing the wrappers—works even better than egg white!

    Heat a pan and add oil. When hot, add the 'Three Friends' paste and stir-fry until fragrant. Add the marinated pork and cook until about 80% done. Add the glass noodles and stir briefly, then add the cabbage, carrot, bean sprouts, shiitake mushrooms, wood ear mushrooms, tofu, and fish sausage. Stir-fry over medium-low heat.

    Season with oyster sauce, mushroom soy sauce, pink salt, and sugar. Taste and adjust as needed. Don’t make the filling too salty, since you’ll dip the rolls in sauce later. The filling should be just slightly savory.

    Once the filling is done, it’s time to wrap the rolls. (If you need help, search YouTube for a wrapping tutorial—it’s not hard!)

    Now for the final step: frying! For golden, crispy spring rolls, use plenty of palm oil for deep frying.

    Heat oil in a pan over medium-low heat. When hot, add the spring rolls. Use tongs to turn them occasionally so they brown evenly. If you don’t turn them, they may burn or brown unevenly.

    When done, remove the rolls and drain on a wire rack. A rack works better than paper towels, as it helps them cool and stay crispy longer.

    For a healthier option, you can bake the rolls in an air fryer or oven instead of frying. They’ll still be delicious and better for you!

    Seasonings can be adjusted to taste. The amounts listed are just a guideline—feel free to tweak them to suit your family’s preferences.
