Wash the zucchini and tomatoes, then slice them into thin rounds.

Peel the garlic clove.

Butter a baking dish and rub it with the garlic. Arrange the vegetable slices in the dish, then add salt, pepper, and Herbes de Provence.

Bake for 5 minutes at 400°F (200°C).

Mix the eggs, sour cream, and cumin together. Pour the mixture over the vegetables and return to the oven for 20 minutes at 350°F (180°C).
