Rainbow Cupcakes with fluffy cloud-like butter cream frosting that is guaranteed to make anyone who sees them smile. The batter is a delicious white vanilla cake base with gel food coloring to brighten things up and the cloud-like frosting is made with butter and lots of sugar. So much goodness going on in one cupcake! Taste the same as normal cupcakes, but more fun to eat! Perfect for kids and people of all ages!!! Let’s start with these rainbow cupcakes.

Rainbow Cupcakes with fluffy cloud-like butter cream frosting that is guaranteed to make anyone who sees them smile. The batter is a delicious white vanilla cake base with gel food coloring to brighten things up and the cloud-like frosting is made with butter and lots of sugar. So much goodness going on in one cupcake! Taste the same as normal cupcakes, but more fun to eat! Perfect for kids and people of all ages!!! Let’s start with these rainbow cupcakes.
Cooking Instructions

Preheat an oven to 350 degrees F (175 degrees C). Line 12 cup muffin pans with paper baking cups.

In a bowl, sieve the flour and baking powder with a pinch of salt. Keep it aside.

Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in colour.

Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next.

Add vanilla essence and milk. Beat well.

Add the dry mix to the wet. Just fold the batter using a spatula to combine well. Don't over mix it.

Divide the cake batter into five separate bowls. Add a few drops of food coloring into one bowl of batter and stir; add more food coloring, if necessary, to reach the desired shade. Repeat with the remaining colors and bowls of batter.

Using a different spoon for each colour batter, spoon a small spoonful of each colour into the cupcake liners, until 1/2 to 3/4 full. (Do not mix the batter once it is in the cupcake liner.)

Bake at 350F for 10 mins then 275F for another 10 mins. Until a toothpick comes out dry.

Frost the cake with your choice and Enjoy the delicious rainbow cupcakes!!!!!!!!!!!!!!

These two flavor cupcakes combine a moist rich chocolate cake with a moist light coffee cake. I tryed out a cupcake batter mold that makes a outer part of the cupcake in one flavor and the inner in the second flavor. The batter I used was thick so it was a time consuming process to pipe and push the batter thrpugh. I Swirled the batter for the last batch. The cupcakes using the mold were stunning with the surprise coffee middle. The swirled ones pretty. Both were delicious, with the seperate flavors working so well together. The frosting is a vanilla marscapone v cream which makes these cupcakes reminiscent of tirimisu! fenway -
