Ingredients

  1. 1/2 inchginger, grated
  2. 2-3garlic cloves, grated
  3. 1/2pineapple, diced
  4. 60 mlapple cider vinegar
  5. 1/4 tspcinnamon
  6. 1/4 tspcumin powder
  7. 1/2 tspblack pepper
  8. 1/2cayenne pepper (optional)
  9. to tasteSalt
  10. 1onion, diced
  11. 2 1/2 tbspbrown sugar
  12. 2large tomatoes, pureed
  13. Cooking oil

Cooking Instructions

    Gather all your ingredients

    In a blender, put in the pineapple and apple cider vinegar, puree it.

    Place a cooking pot over heat, add in the cooking oil and sautee the onions, garlic and ginger.

    Add in cinnamon, cumin powder, black pepper, cayenne pepper, salt, brown sugar and pureed tomatoes. Stir and mix well.

    Add in the pureed pineapple, stir to mix. Taste and adjust it to your liking.

    Allow to cook to a boil, reduce heat, and let simmer for 10-15 min.

    Once done, can be used to prepare you beef, lamb,pork or even chicken.

    It can also be stored in a tightly closed jar, inthe refrigerator for a week or two.
