Bhaji Pau/pau bhaji whatever we call it, is famous street food of India ,which can be handy and a quick fix menu any time. As bhaji contains a lots of vegetables, it is a healthy option any time.
Here I have made this famous street food more healthy and delicious with a different combination. I skipped the bun and combined it with white millet.
White millets are gluten free and diabetic friendly with other nutrients.

Wash and pressure cook millet by adding salt and water as per 1:3 ratio that is 3 cups of water for 3 whistles. Let it cool.

Finely chopped tomatoes,onions and garlic.

Heat butter/ghee and saute onion and garlic. Further more add, tomatoes and saute till the butter separates. Then add all the spices, peas,boiled vegetables and cashews. Mix well. Add juice of lemon, salt and coriander, mix and turn off the heat. Our bhaji is ready.

Separate millet with hands and mix mint leaves.

Now in a baking tray spread the prepared millet layer, then bhaji layer. Cover it with grated cheese. Bake it for 20 minutes on 180℃.

Serve hot.
