Quick Focaccia with Instant Yeast

Ever find yourself out of bread or baked goods and really craving some? I do! So I decided to try making a quick focaccia using instant yeast. Honestly, I had never tried it before because I usually prefer long rising times. But it was worth a shot, and I have to say the result was pretty good! Don’t expect the flavor of a focaccia that’s risen for 24 hours, but it’s definitely practical and quick—which is always a plus!

Combine the flour, sugar, olive oil, and instant yeast in a bowl or stand mixer. Start mixing while slowly adding half of the water.

Add the salt and the remaining water, continuing to mix. The dough will be very sticky. Transfer it to a baking sheet and spread it into a rectangle with your fingers, greasing your hands with oil to make it easier.

Drizzle generously with olive oil, sprinkle with some coarse salt, and add a few rosemary leaves. Bake at 350°F (180°C) for 20 to 25 minutes. Remove from the oven and serve!
