Cooking Instructions
- 1
First, make the pita bread or you can also buy it. I followed our colleague SonyCarma's recipe and it turned out spectacular!
- 2
Now for the falafel mixture. Preheat the oven and while it's heating, blend the chickpeas, garlic, onion, cilantro, and parsley in a food processor. Once you have a smooth mixture, transfer it to a large bowl and add the ground cumin, salt, and baking powder. Use a small ring mold to shape the falafel and place them on parchment paper on a baking tray at 350°F (180°C) for about 15 minutes or until golden brown.
- 3
Meanwhile, let's make the sauce. Grate the half cucumber and strain it to remove excess water, then mix it with the yogurt, lemon zest and juice, garlic, salt, and a drizzle of olive oil. Mix everything well and set aside.
- 4
Once the falafel are done, remove them from the oven and place them on a serving dish. Meanwhile, prepare the accompaniments: carrot strips, thin cucumber slices, and arugula sprouts.
- 5
Serve at the table so everyone can assemble their falafel to their liking and enjoy!

Baked Falafel Baked Falafel
Falafel is made from chickpeas or fava beans. You can add flour to the mixture to help it hold together during cooking, but too much flour can ruin the texture and make the falafel too bready. Baking soda softens the chickpeas so they cook more easily and evenly. It's important to let the mixture rest in the refrigerator for 30 minutes so it binds together better.
