Mirchi Aachar (pickle)

Wash the ginger and keep it in sunlight for dry. Cut in the middle part of chilli.

Take a kadhai and dry fry jeera seeds, ajwain, fenugreek, kalongi, black mustard seed. After the fry grind and make the powder.

Take a kadhai/pan heat the oil. Turn off flame and then after 1 minute add the chopped garlic. Stir and let it for cool.

Take a bowl, add the chillies, add grinded powder and mix gently. Add asafoetida, turmeric powder aamchur powder, salt and mix well.

Add the heated oil after cooling. Mix it gently. Keep it in air tight jar and keep in sunlight for 3 days. Chilli pickle is ready.
