I surprised my family and friends by preparing ' halwai' style Habshi Halwa at my home. I tasted for the first time in Rampur a city in UP. I discussed the owner of the shop about recipe, he told me the secrets and details of this halwa. It need time and patience. Whole preparation is to be done on low flame. I took full 2 hours to prepare Habshi Halwa.
Habshi Halwa is a milk halwa that is made by curdling, sweetening and flavoring milk. It is a slightly tedious task to cook the halwa as it takes long to get it to the right consistency. But it is worth the effort because it brings together the best of milk solids, ghee and nuts, into a right Indian dessert.
Habshi Halwa (हब्शी हलवा) translates 'dark' or colour 'black', according to history this recipe comes from the royal kitchens during 'The Moghuls' & Multan.
Habshi Halwa is made with Milk, Desi Ghee, Sprouted wheat, Nuts and takes long time to prepare.

Ingredients

120 minutes

  1. 150 gmWheat Flour (preferably sprouted wheat paste)
  2. 2 litres (1+1)Milk
  3. 500 gmSugar (to taste)
  4. 200 gm (100+100)Assorted Dry Fruits
  5. 350 gm (100+250)Desi Ghee
  6. 2 tspGreen Cardamom Powder
  7. 2 tbspCitric Acid
  8. 1 cupDark Chocolate

Cooking Instructions

    Collect ingredients: dry fruits, wheat flour, sugar

    Dark Chocolate, Desi Ghee, Citric Acid

  3. 3

    Boil 1 litres of milk. Switch Off Flame. Bring down temperature to 20%. Add Citric Acid to curdle milk.

    Cook the curdled milk to thicken the consistency. Divide 200 gm dry fruits into two parts - 100 gm each.

    Take 100 gm Desi Ghee in a pan. Roast wheat flour and add 1 litres of milk slowly and step wise to avoid lumps. This wheat flour milk will now be added in thickened curdled milk in parts, step wise, continuously stirring the mixture.

    In this mixture start adding Chopped chocolate, stir it, add sugar.

    Add crushed seeds of green Cardamom or add green Cardamom Powder, one part of dry fruits and stir it.

    Add 250 gm Desi Ghee in parts, stepwise. Cook till colour changes to dark brown. Whole cooking is to be done on low flame. It is a work of patience if you want the best results. Prepare burfi tray. Lay on a good quality of butter paper in tray.

    Transfer it to the tray. Garnish with second part of dry fruits. Let it set to cool naturally. DON'T REFRIGERATE IT.

    Serve with pride. This is for the first time I prepared.
