Pound all the curry paste ingredients together until smooth. Set aside.

Heat the oil in a pot. Add the curry paste and stir-fry until fragrant. Add the pork ribs and stir until almost cooked, then add the water.

Simmer over low heat for about 10 minutes until the pork is tender. Add the banana blossoms and tomatoes, pressing the banana blossoms down so they are submerged to prevent browning. Bring to a boil again.

Add the acacia leaves and chopped wild betel leaves. Stir to combine and taste for seasoning. Once satisfied with the flavor, turn off the heat and serve in a bowl.
