Ingredients

Serves 2 servings
  1. 12 ozchicken breast or thigh (about 350 grams)
  2. 1/2 cuproasted cashew nuts
  3. 4 piecessweet chili peppers (half a pepper each) or red chili peppers
  4. 2green onions
  5. 1 handfulgreen onions
  6. 1yellow onion
  7. 3.5 ozmushrooms (about 100 grams)
  8. 1/2 cupcrispy coating flour, cornstarch, or all-purpose flour
  9. 1 1/2 tablespoonsminced garlic
  10. 1 1/2 tablespoonsgranulated sugar
  11. 2 teaspoonssesame oil
  12. 2 teaspoonssweet soy sauce
  13. 3 tablespoonsoyster sauce (1 tablespoon for marinating chicken, 2 tablespoons for stir-frying)
  14. 2 tablespoonslight soy sauce
  15. 1 tablespoonfish sauce
  16. 1 tablespoontamarind juice
  17. 1 tablespoonThai chili paste
  18. 1/2 teaspoonground black pepper
  19. 1 cupoil for frying and stir-frying
  20. 3 tablespoonswater

Steps

  1. 1

    Cut all the vegetables into bite-sized pieces.

    Marinate the chicken with 1 tablespoon oyster sauce for 10–15 minutes.

    In a bowl, mix all the sauce ingredients: soy sauce, oyster sauce, sesame oil, sugar, tamarind juice, Thai chili paste, fish sauce, and sweet soy sauce. Stir everything together until well combined.

    Coat the chicken with flour. Meanwhile, heat oil and fry the dried chilies, being careful not to burn them.

    Fry the chicken until golden and crispy, then set aside.

    Heat a pan and add 1 1/2 tablespoons of oil (use the same oil from frying the chicken).

    Add the minced garlic and stir-fry until golden and fragrant.

    Add the sweet peppers, paprika, and onion. Stir-fry a few times.

  9. 9

    Add the sauce and mix everything together.

  10. 10

    Add the chicken and cashew nuts to the pan. Stir to make sure everything is coated with the sauce. Add a little water if it looks too dry.

  11. 11

    Add the green onions, fried chilies, and black pepper. Turn off the heat, stir a few more times, and serve hot with steamed rice.
