This Massaman curry includes potatoes, chicken thighs, chicken drumsticks, and pork loin. Everyone in my family likes different meats, so I add them all to make sure everyone enjoys the meal!
Cooking Instructions

Heat the thick part of the coconut milk in a pot until it just starts to boil. Stir in the Massaman curry paste until dissolved, then add the remaining coconut milk.

Add the pork and chicken to the pot with the coconut milk and curry paste. Simmer until the meat is partially cooked, then add the potatoes and onions you prepared earlier.

Season to taste with tamarind paste (for sourness), salt, fish sauce (for saltiness), and sugar (for sweetness). Continue simmering on low heat until the potatoes are tender. If you prefer chicken, you can serve it once the chicken is cooked through. For tender pork, continue simmering on low heat for about 1.5–2 hours.
