Wash the chicken wings thoroughly and drain well. In a mixing bowl, combine the pounded cilantro roots, pounded garlic, ground black pepper, coconut or palm sugar, honey, evaporated or whole milk, soy sauce or light soy sauce, oyster sauce, and dark soy sauce. Mix everything together until well combined.
Use a fork to poke holes all over each chicken wing. Add the chicken wings to the marinade and toss to coat evenly. Cover and marinate in the refrigerator for at least 2-3 hours, or overnight for best flavor.

Soak wooden skewers in water to prevent burning during grilling. Thread the marinated chicken wings onto the skewers until all are done.
Always preheat your oven before baking. Preheat to 350°F (180°C) for 10 minutes. Place the chicken wings in the oven and bake at 350°F (180°C) for the first 20 minutes.

Remove the wings and flip them over. In a bowl, mix the dark soy sauce, honey, and sesame oil until well combined. Brush the honey sauce over both sides of the chicken wings.
Return the wings to the oven and bake for another 20 minutes, or until the chicken is cooked through and nicely browned. Oven temperatures may vary, so keep an eye on the doneness and color of the wings.

Once the chicken is cooked, remove from the oven.
Arrange on a serving plate and garnish as desired. Serve with spicy Thai dipping sauce (jaew) and hot sticky rice. Enjoy!
