Ingredients

  1. 1 kgflour
  2. 20 gkosher salt
  3. 700 gwater (90⁰F)
  4. 2 ginstant yeast

Cooking Instructions

    Mix flour and 90% of the water until sticky.

    Mix yeast and remainder of water

  3. 3

    Let both sit for 25m

  4. 4

    Add salt to dough and pour yeast slurry over it.

  5. 5

    Squish and pinch dough until salt and slurry are incorporated

  6. 6

    Knead 2-4 more times

  7. 7

    Separate into 6 or 7 balls. (≈ 287g or 246g each). Flouring and stretching each into rounds
