Steps

Take a pan add oil heat add mustard seeds, cumin seeds, curry leaves and raw peanut saute it later add garlic and onion.

Let onion get light now add tomato saute and add salt so that tomato gets mashed fast

Tomato gets mashed later add dry spices put the lid for 2-3 mins.

After that add mashed baigan and saute it well and again put lid for 4-5 mins so baigan get cooked

Serve it with roti and garnish it with coriander..
