Japanese dashi-stock made by Konbu-kelp and sometimes with dried Shiitake mushrooms. I usually use both but this time, I only have a konbu in my cupboards. Good for vegans and vegetarians.
Both can be purchased by online or in a Japanese store in London. Or an oriental shop.
Or buy a pack of Shiitake mushrooms in a supermarket and dry them at home as I do.

Ingredients

  • 1peace of Konbu-Kelp (10cm x4cm, this time)
  • 500 mlwater
  • Some dried shiitake mushrooms, if you have

Steps

  1. 1

    Konbu-Kelp and dried Shiitake mushrooms. Shiitake mushrooms has to soak in a water before cooking like beans. Use a hot water, it's quick!

    Heat the Konbu water and bring to the boil. That's it. Konbu doesn't need to soak in a water.
