When we talked about protein green grams is first comes in our mind. Spinach is rich source of iron. Combined this two healthy ingredients I used to make this often.
Steps

Soak moong dal in a water for half an hour. Wash spinach leaves and chop. In a pan take oil and heat it add Cumin and asafoetida. Add chopped garlic and spinach leave to saute. Stir well and add ginger and chillies. Add salt and turmeric. Add chopped tomato and cook it until it become soft.

Add moong dal other dry ingredients, lemon juice and stir well. Add 1/2 glass of water to simmer. Let moong dal get softer and cover with lid. Cook it until oil comes out. I Served with mini fried paratha.
