Cooking time formula:
“To calculate your cooking time, multiply the exact weight of the roast by 5. Round the resulting number to the nearest whole number. The rib is cooked at 500 degrees F for exactly that many minutes. For example, for a 6 pound roast: 6x5=30, so cooking time is 30 minutes. Turn the oven off and wait 2 hours before opening the oven door.”

  • to tasteSea salt
  • to tasteUnsalted butter (softened)
  • to tasteThyme (dried or fresh)
  • to tasteGarlic powder
  • to tastePepper

Steps

  1. 1

    Let rib roast rest outside for 6 hours to reach room temperature

  2. 2

    When you are ready to cook, preheat oven to 500

  3. 3

    Salt entire roast. Rule of thumb is using 2x the amount of salt you think you should use. See pic

    Mix softened butter, thyme, garlic powder and pepper in a bowl. Make enough to cover roast. Spread all over roast

    Place rib roast in the oven and cook according to the formula (in description). Remove roast, loosely cover in foil and let rest for 30 minutes before serving to let the juices evenly distribute.
