These get a “delicious!” out of my son each time. There was a rough patch between changing to a low histamine diet and figuring out how to make him this previous staple. I was pretty stoked out how quickly and easily this comes together. I can prep all of the nuggets, from frozen chicken breast to breaded and ready to go, in the time it takes my oven to preheat! I serve them with sweet potato fries and use either honey 🍯 or his carrot sauce as a condiment. Add a side salad and voilà! A nutritious, child approved, low histamine dinner.

Ingredients

  1. Chicken
  2. 1thinly sliced and trimmed chicken breast cut into 2” chunks
  3. Breading
  4. 1/3 ccrumbs, from safe crackers or bread, we use rice crackers
  5. 1/4 tspHimalayan or sea salt
  6. 1/4 tspcoconut sugar
  7. 1/2-1 tspgarlic powder
  8. 1/2-1 tsponion powder
  9. Coating
  10. 1/2 tbspground flax seeds
  11. 1 1/2 tbspwater
  12. Serving Sauce
  13. 2 tbspcarrot sauce thawed from frozen

Cooking Instructions

    Preheat oven to 400*. Brush baking/cooling rack with oil and set on top of a sheet pan lined with parchment to catch any crumbs.

    Mix your water and ground flax seeds together and let them set up while you run a frozen chicken breast under warm water to thaw.

    Blitz your crackers or toasted bread in a blender or coffee grinder to desired breading texture and then mix in a small bowl with salt, coconut sugar, garlic and onion powders.

    Cut thawed chicken into kid sized pieces and dip first into flax mixture and then in the breading before placing on top of the prepared cooking rack.

    Cook for 13-15 min or until meat thermometer reads an internal temp of 160*. Nuke carrot dipping sauce in microwave or serve with honey.
