Easy No-fry Chicken Nuggets

When I had just started to cook my husband's bentos, I wanted to come up with a recipe for homemade cold dishes that I could pack in lunchboxes as is.

If you coat the outside with katakuriko, it will become a bit crispy on the outside when cooked.
If you coat the patties with cake flour, they'll look like they were fried.

*You could use chopped chicken instead of ground chicken to improve the texture. For 10 to 12 nuggets. Recipe by Daffi-0513

Ingredients

12 servings
  1. 160 grams☆Ground chicken thigh
  2. 1☆Egg
  3. 3 tbsp☆ Panko
  4. 1 dash☆Salt
  5. 1 dash☆Pepper
  6. 1Katakuriko (or cake flour)
  7. 1 dashSalt

Steps

  1. 1

    Combine all ☆ ingredients and mix well. Form into round and flattened patties.

    Dust both sides of the patties with katakuriko.

  3. 3

    Heat vegetable oil in a pan and grill both sides until browned. Turn the heat to low and cover the pan. Cook well.

    Serve with a little salt.

    I usually freeze them! It's very handy because if you pack them in bentos in the morning, it will defrost naturally by lunchtime!

    If the meat mixture is too sticky and hard to form, add more panko.

  7. 7

    If you want them soft and fluffy, I recommend you prepare them without panko.
