Pav Bhaji !! I am someone who loves street food be it different types of Chaat, puchkas, pakodes and Pao Bhaji being my most favorite one. Now with the lockdown you have no other option than to satiate your taste buds with homemade street food. Homemade street food..sounds so funny right!! . Today we have a beautiful weather here. It's drizzling and I did see a rainbow even. So I thought what better than enjoying a plate of pav Bhaji with old songs playing in the background. Ahh!! I call it Bliss.

Ingredients

  • 2medium Potato chopped
  • 3/4 cupchopped Cauliflower
  • 1medium Carrot chopped
  • 1large Onion, chopped
  • 1 tbspGinger Garlic Paste
  • 2medium Tomatoes, chopped
  • 1small Capsicum chopped
  • 1/4 tbsp Turmeric Powder
  • 1/2 tbsp Cumin Powder, optional
  • 1/2 tbsp Coriander powder
  • 2 tbsp Pav Bhaji Masala Powder
  • to tasteSalt
  • 2 tbspOil + 2 tbsp Butter
  • 2 tbspfinely chopped Coriander Leaves
  • As neededPav Buns, for serving
  • As requiredChopped onion and lemon slices for serving

Steps

  1. 1

    Pressure cook the chopped potato, cauliflower, carrot with water and salt for 2 whistles

  2. 2

    Mash the vegetables well into a little chunky texture.

  3. 3

    Heat 2-tablespoons oil and 2-tablespoons butter together in a pan over medium flame.

  4. 4

    Add chopped onion and ginger-garlic paste and sauté until onion turns translucent.

  5. 5

    Add chopped capsicum, chopped tomato and salt and sauté until tomatoes and capsicum turn soft.

  6. 6

    Add turmeric powder,cumin powder,coriander powder and 2-tsp pav bhaji masala powder.Stir and cook for a minute.

  7. 7

    Add little water, mix well and cook for 2-3 minutes.

  8. 8

    Now add the mashed vegetables,mix well and cook for 4-5 minutes.Turn off the flame. Add chopped coriander leaves and mix well. Bhaji is ready for serving

  9. 9

    Cut the pav buns horizontally into halves and toast them on medium flame using a tablespoon of butter and lil Pav Bhaji masala

  10. 10

    Transfer prepared bhaji to a serving bowl and garnish with a cube of butter and serve hot with butter toasted pav, sliced onion and lemon wedges.
