Ingredients

10minutes
2 servings
  • Halfblock of tofu
  • Halfa bag of rainbow salad or similar (stir fry veg?)
  • Aldi rice packet - coconut, chilli & lime flavour
  • 1egg
  • Soy sauce
  • Olive oil
  • Halfa stock cube

Steps

10minutes
  1. 1

    Roughly chop tofu and fry in oil for 4 mins

  2. 2

    Add the bag of salad/stir fry veg

  3. 3

    Add plenty of soy sauce

  4. 4

    Add the rice and fry all together for 3 mins

  5. 5

    Make a well in the middle, crack the egg in, scramble it and let cook for 30s then mix in with meal

  6. 6

    Enjoy! (The leftovers are great cold for tomorrows lunch)
