Gather all the ingredients.

Bring the water to a boil in a pot with the olive oil, then slowly add the polenta, stirring constantly to prevent lumps.

When the polenta is almost cooked, add the nutritional yeast or cheese and the herbs. Mix well.

When the polenta pulls away from the sides of the pot, it’s done.

Grease a plastic container with oil, pour in the polenta, and spread it evenly. Let it cool.

Once cooled, turn the polenta out onto a cutting board.

Cut the polenta into strips and place them on a baking sheet lined with parchment paper.

Bake at 400°F (200°C) for 30 minutes or until golden and crispy.
