Ingredients

12 muffins
  1. 1 1/2 cupswheat bran
  2. 1 cupbuttermilk
  3. 1/3 cupvegetable oil
  4. 1egg
  5. 2/3 cupbrown sugar
  6. 1/2 tspvanilla extract
  7. 1 cupall purpose flour
  8. 1 tspbaking soda
  9. 1 tspbaking powder
  10. 1/2 tspsalt
  11. 1/2 cupraisins, dried cranberries, dried cherries, etc

Cooking Instructions

30 minutes

    Preheat oven to 375°F.

    Mix bran and buttermilk in bowl and let soften for 10 minutes.

    Beat oil, egg, brown sugar and vanilla together in another bowl and then mix into bran and buttermilk mixture.

    Sift flour, baking soda, baking powder and salt together then mix into the batter.

  5. 5

    Fold in dried fruit and spoon into geased muffin pan or muffin cups or silicone muffin pan.

    Bake 15-20 minutes.
