In my beautiful and eventful state Odisha. Dalma is a traditional and all time favorite recipe . Dalma is prepared with any types of dals (mostly Moong dal) vegetables , grated coconut and/or Sag (green leafy vegetable). I have taken the veggies for Dalma ,those were available in my kitchen. You can choose any veggies you like. In many households Dalma and Roti/Paratha/Poori/Chudaghasha is common and long lasting nutritious pair of recipes.

Ingredients

3 servings
  • 1 cupArhar dal
  • 2 cupschopped veggies like( brinjal, taro root, sakarkand, potato, raw banana)
  • 1tomato chopped
  • 1medium onion chopped
  • 3green chilli chopped
  • 1 tsp ginger grated
  • 2 tbspgrated coconut
  • 1/2 tspturmeric powder
  • 1/2 tsppanch phutan
  • 1 tbsproasted cumin powder
  • 1tej patta(bay leaf)
  • 2 tbspdesi ghee
  • to tasteSalt

Steps

    Clean, wash and soak the dal in warm water. Cut the veggies earlier and keep in water to prevent brinjal and raw banana turn black.

    In a pressure cooker take 3 cups of water. Add the turmeric powder and washed Arhar dal. Boil for 3 minutes without covering.

  3. 3

    Now mix the chopped veggies, grated coconut and pressure cook for 1 whistle. Let the cooker cool.

  4. 4

    In a wok heat ghee. Allow the panch phutan to splutter. Add tej patta, chopped onion and green chili. Fry till the onion translucent.

  5. 5

    Now and chopped tomatoes, grated ginger and salt as per required. Cook in medium heat till chopped tomatoes are soft and mushy.

  6. 6

    Add half a cup of water, mix well, bring to boil and transfer to cooker containing boiled dal, grated coconut and veggies.

  7. 7

    Mix well. Cook and bring to boil without covering. Switch off the flame and add the fried Cumin powder to give a beautiful aroma and taste to the prepared Dalma. Now the Dalma is ready to serve.
