Ingredients

  • 450 glarge red cillies
  • 50 ggarlic
  • 225 gshallots
  • 175 gturmenic
  • 100 gginger
  • 125 gcandlenuts
  • 200 gtomatoes
  • 2Tbsp coriander seeds crushed
  • 2Tbsp Dried prawn (shrimp) paste
  • 150 mlcoconut oil
  • 2,5Tbsp tamarind pulp
  • 3Salam leaves
  • 2stalks lemon grass
  • 0,75Tbsp salt
  • 250 mlwater

    Combine all ingredients except tamarind pulp, salam leaves, lemon grass, salt and water in a stone mortar or food processor and grind coarsely.

  2. 2

    Place ground ingredients in a heavy saucepan, add remaining ingredients and simmer over medium heat for ~1 hour or until water is evaporated and paste takes on a golden colour. Cool before using or storing in the refrigerator.
