Ingredients

  1. 6 1/2 lbshominy (about 3 kg)
  2. 4 1/2 lbsboneless, skinless chicken breast (about 2 kg)
  3. 4 1/2 lbstomatillos (about 2 kg)
  4. 1/4 lbgreen chiles (about 115 grams)
  5. 1 bunchcilantro
  6. 2onions
  7. 1 headgarlic
  8. as neededchicken bouillon powder
  9. lettuce, to taste
  10. radishes, to taste
  11. limes, to taste
  12. chopped onion for serving, to taste
  13. oregano, to taste

Cooking Instructions

    Cook the hominy in a pressure cooker with water and a little salt. Cook 1/3 of the hominy at a time for 1 hour each batch, for a total of 3 hours.

    Blend some tomatillos with garlic, onion, green chiles, and cilantro in a blender. Repeat until all are blended.

    Cook the chicken breasts in water with onion, garlic, and chicken bouillon.

    Heat a large pot with oil and pour in the blended sauce.

    Once the hominy is cooked, add all the hominy to the sauce. Season with chicken bouillon powder.

    Remove the chicken breasts, strain the broth, and add the broth to the sauce and hominy. Add a little water if needed.

    Bring to a boil and simmer until well seasoned. Taste and adjust salt if needed.
