Cooking Instructions
- 1
Chop up parsley and put aside
- 2
Brown minced beef in ghee and season with salt, black pepper, all spice and cinnamon.
- 3
Mince garlic cloves and mix in with yogurt.
- 4
Pull apart bread (I use stale bread just to make use of it and not throw it out) in a big pyrex pan.
- 5
In a sauce pan, open 2 cans of chickpeas and fill one of these cans with water and pour in pan. Add salt and cinnamon and leave to boil.
- 6
Now for the fun stuff, we get to mix all this together. So, we pour all the water with half the chickpeas on the bread. We add in the yogurt mixture and we mix until all bread is soaked in mixture.
- 7
Now we garnish, pour the minced meat on top, then the rest of the chickpeas, the chopped parsley and finally one last step.
- 8
Brown some pine nuts with ghee and pour the nuts with their ghee all over the pan. Bon appetite! ❤️

Middle Eastern Fatteh Middle Eastern Fatteh
I learned this recipe from a Lebanese friend. It won't qualify as a vegetarian dish anymore, but this is also tasty with lamb or chicken. To prepare it with meat, finely chop the meat into bite-sized pieces, then sauté in a frying pan, season with salt and pepper, then place it on the plate in Step 2, then cover it with the yoghurt sauce and pinenuts. Light Eggplant Fatteh Light Eggplant Fatteh
This Eggplant Fatteh is a healthier and lighter version of the classic middle eastern Fatteh. Eggplant Fatteh is basically a layered eggplant and yoghurt salad. Layers of crispy pita bread, eggplant and tomato sauce, ground beef, and yoghurt sauce, topped with pine nuts, parsley, and pomegranate seeds. For a healthier Fatteh , Instead of deep frying the eggplant cubes and the pita bread squares, I cooked the eggplants with the tomato sauce on the stove and toasted the bread in the oven. palibites -

The One With The Lebanese Pita Bread The One With The Lebanese Pita Bread
Living in the United States has its positives and negatives. One of the negatives of living in the United States is missing out on easy access to the most common traditional things my country has to offer, like our bread. Pita bread is an essential item in every Arab woman's kitchen, so today I made this for my husband because my loving husband eats our bread with E-Bhi-E-Aur-Y-T-Hai-I-And-G so I researched a lot of recipes till I came up with my own that felt like the perfect fit for me. I hope you like it! ❤️ Fey Hankir -

Fatai (Lebanese Meat Pies) Fatai (Lebanese Meat Pies)
I looked up a recipe for my husband's beloved "fatai" (my husband calls it "fatai," but it's really called "fataya") and came up with my own version using more meat. The dough is a bit firm, but if you let it rest for a bit, it will be easier to roll out. When wrapping it up, don't completely close the top, but leave a gap so that it opens a bit while baking.
