Ingredients

12-14 hrs (prep to dish)
4-6 people
  • 1 CupRaw Peanuts (washed & soaked in water, overnight or at least 8-10 hrs time)
  • 1 cheese/muslin cloth
  • 1Strainer
  • 2 tbspFresh Lemon Juice/Vinegar- To curdle the Nut Milk
  • 2 tbspWater
  • As neededCold Water (to wash the curdled milk)

Steps

12-14 hrs (prep to dish)
  1. 1

    Clean & Soak the peanuts overnight & then peel off its skins by straining it from the water & washing it 2-3 times with fresh water

    Post peeling off the skins from the peanuts: In a blender jar- blend it smoothly by adding 2 Cups of water

    Now, put a saucepan over a low-medium flame on the oven & add in the blended Peanut mixture & allow it to come to a boil as like any other dairy milk

    In a small bowl: Mix equal proportions of the Vinegar/Fresh Lemon Juice and water & mix it gradually with the boiled nut milk

    Keep on stirring continuously & keep the flame on the low heat for about a minute or so & then strain & separate the nut paneer & the whey by a muslin/cheese cloth over the strainer

    Wash it with the cold water so as to avoid any smell of using the citric acid (Vinegar/Lemon Juice), to curdle it

    Squeeze out the excess water as much is possible & either hang it on a height or keep under a heavy weight in order to drain out the excess water- overnight

Unfortunately this recipe is missing an important step! After blending your peanuts and water you need to strain the nut pulp out to make the nut milk you'll need to boil and curdle. Please don't skip this step our you'll end up with a block of soggy nut pulp.Step 3 should read "Strain your blended nut mixture to eliminate nut pulp. Now, put a saucepan over a low-medium flame on the oven & add in the peanut milk & allow it to come to a boil as like any other dairy milk"
