Greek style peas - ARAKAS LATHEROS

For #mycookbook24 I’ve gone back to a beautiful place in Corfu, Kassiopi. This is the place where the idea for my “Recipes From My Travels” blog came about. It’s simple but delightful comfort food that’s usually cooked in a fair bit of olive oil, but I’ve reduced the amount for my take on this dish.
Greek style peas - ARAKAS LATHEROS

It’s simple but delightful comfort food that’s usually cooked in a fair bit of olive oil, but I’ve reduced the amount for my take on this dish.
Cooking Instructions

Par boil the carrots and potatoes. Then gently fry the onions in olive oil and add your peas and tinned tomatoes. Bring it back to a simmer and add the carrots and potatoes.

Cover and simmer for about 10 mins, if the sauce gets to dry add water, if your sauce gets to runny add breadcrumbs...you can’t lose!! But make sure the potatoes stay firm and in shape. Plate up the ARAKAS LATHEROS with a scattering of parsley and Greek feta and a squeeze of lemon.

I also planted Broccoli, this has become huge I am not sure if my little garden will be able to hold it. 🙂This is a Greek dish…with ingredients that I am hoping would exist in everyones fridge. I know that Carrots and Peas may not be the first choice for lunch or dinner, but if you add tomatoes and a bit of tomato paste well I am sure you will be going back for more. 🙂 It is truly a very simple recipe just a few steps and you’ve got a delicious and healthy meal for lunch or dinner or even a side dish.. 🙂 Foodzesty -

Hi everyone, I hope you all enjoyed your weekend :) A brand new week ahead of us and I am hoping that it is a good one for everyone. I am back with a salad again today, and this one I know that everyone knows and has tried :) the Traditional Greek Salad, or otherwise known in Greece as "Choriatiki Salata" which translated into English means "Country Salad" or "Village Salad"This reminds of a story, my Dad had a really great sense of humour sometimes his jokes were just to funny that my stomach would hurt from laughing so much, but sometimes he would say things that were just so nonchalant...This is really funny but you need to understand Greek to be able to understand. We had gone to a Greek Tavern in Chasia which is an area in Athens that mainly has Greek Taverns. :) We were just about to order the appetisers when my dad turned around in a very nonchalant way and asked the waiter if they had "Vlaxiki salata" instead of saying "Choriatiki salata". We had never heard this salad referred to as Vlaxiki Salad, we had a good laugh and so did the waiter!! :)The truth is that back in those days the Villagers would grow there own tomatoes, cucumbers, so when working in the fields they would have a Tomato, Cucumber a few olives on a napkin to eat. So the term Vlaxiki Salata comes from how they used to eat, as years followed the named changed to Greek Salad, or Choriatiki. :) My mom grew up in a village so she told me that back then this is what my grandfather use Foodzesty -

I love a pork roast (pieczeń wieprzowa in Polish) and this is one of my best recipes. I call it "In the Polish style" as it is heavy on the garlic. Don't cut back on the garlic, though, because, as the roast bakes, the garlic cloves caramelize and become sweet bits of goodness within the roast.
