Chicken Soup (My Mom's Style)

My mom makes chicken soup with the vegetables cooked separately—she doesn't boil them with the chicken. She steams the vegetables, and everyone adds as much as they want to their bowl. I made a small batch just for my husband and me, taking advantage of my steamer pot to cook everything at the same time.

In a pot, add the water, chicken pieces, seasonings, tomato bouillon cube, onion, and garlic. Place the steamer rack on top and arrange the vegetables, cut into medium pieces, on the rack.

Bring to a boil over high heat, then reduce to medium-low and cook for about 20-30 minutes.

My mom usually steams the vegetables separately in a steamer. I didn't have more vegetables, but I would have liked to add celery and chayote. (I think steaming the vegetables makes them taste better than boiling—what do you think?)
