In a pot, bring water to a boil with bay leaf, thyme, 1 garlic clove, and half an onion. Once the water is boiling, add the soy protein and season with salt to taste.

When the soy protein is soft, fluffy, and cooked, remove from heat and drain.

In a skillet, heat oil and sauté onion. When the onion is translucent and starting to brown, add the soy protein. Add soy sauce and Maggi seasoning sauce to taste, and adjust salt if needed. Cook for 10 more minutes.

In another skillet, heat a little oil and lightly fry the tortillas. Add the soy mixture. You can serve with chopped cilantro, chopped onion, and a delicious salsa verde.
