Ingredients

  • 500 gmschicken
  • 2onions boiled paste
  • 10-12cashew nuts
  • 1/2 cupcurd
  • 1 tbspmalai or fresh cream
  • 2-3green chillies paste
  • 1 tsplemon juice
  • 1/4 tsp turmeric powder
  • 1/2 tspred chilli powder
  • 1 tspcoriander powder
  • 1 tsptandoori masala
  • Whole Spices
  • 2cardamoms
  • 4cloves
  • 1small stick cinnamon
  • 2bay leaves
  • 1/4 tspgaram masala powder
  • 1 tbspginger garlic paste
  • 1/2 cupmilk
  • 1 1/2 tbspghee
  • 2 tbsprefined oil
  • 1 tbspkasoori methi
  • 1 tbspcoriander chopped
  • 1charcoal for smoking

Steps

    Marinate chicken for an hour with 2 tbsp curd,little salt and ginger garlic paste.Heat oil and sprinkle half crushed whole garam masala and bay leaves.When they splutter, add the boiled onion paste and fry for 3-4 minutes till oil leaves sides.Add coriander and tandoori masala powder and salt to taste.Toss well.

    Add marinated chicken and fry.Make a paste of cashewnuts,rest of curd and add it alongwith other masalas,crushed kasoori methi and toss till oil leaves sides.Add ghee,cream and milk and if needed little water and cook on low flame till chicken is cooked properly.

    When oil starts floating on top, the chicken is done.Sprinkle garam masala and chopped coriander and toss.Keep the chicken covered.Heat a piece of charcoal in open flame till red hot.Place it in a small bowl and set it in the chicken.Add a teaspoon of ghee in it.It will start to smoke.Cover lid and arrest the smokey flavour in chicken.

    Serve hot delicious Hyderabadi Smoked Chicken with tandoori roti, butter naan, pulao or jeera rice.
