Heat 2 tablespoons of oil on medium in a shallow pan and sauté the onions until golden but not burnt

Add garlic and ginger, stir. And as it gets fragrant, add all the spices and desiccated coconut and keep stirring until everything sticks together

Add another 2 tablespoons of oil and raise the heat to medium-high. Immediately add the chicken, season with salt and pepper and cook stirring until the chicken starts to brown (4 to 5minutes). Ensure it does not cook all the way through as it will become tough

Pour in the lemon juice, milk, and sugar. Stir and cook until sauce is a little thickened

Enjoy with rice or naan
