Beef Mole Enchiladas Beef Mole Enchiladas
When I was a kid one of my favorite things to eat was cheese enchiladas suiza. Suiza is enchiladas with a tomato based sauce. As I got older and my pallet became more refined my favor turned to beef and the delicious mole sauce. If you've never tried it you don't know what you've been missing. Pronounced Mole-ay, it's a chocolate based sauce, but don't let that perturb you. It doesn't taste anything like the chocolate you're thinking of. It's a fantastic, savory, spicy brown sauce that pairs so well with beef. Here's my quick and easy recipe for Beef Mole Enchiladas. Whitetrash Gastronome -

Slow Cooker Chicken Mole Slow Cooker Chicken Mole
Honestly, I am not the biggest fan of Chicken Mole, but my wife loves it. For Cinco de Mayo, I decided to make this dish for her. I immediately found out that when it is made fresh at home, it is so much better than what you get it at the restaurants. But please, please, please do not make the same mistake that I did with the recipe. A lot of recipes called for 4lbs of Chicken, but that seemed to be too much to us. We decided to halve the recipes that we found. We did that with everything, EXCEPT the chiles. Holy cow, that was Hot!We added more chocolate, so it was salvaged somewhat. Do not worry, this recipe has the right amount. If you like your food really hot, then just double the chiles. We had this over rice one night and in a burrito the following. Both were really good.Enjoy! J.A.B. -

California Farm Easy Mexican Mole Poblano Sauce California Farm Easy Mexican Mole Poblano Sauce
This sauce is easiest with a handheld blender, but can be made with a food processor or mortar and pestle as well. My version uses milder peppers, deseeded, and pure dark chocolate powder.I make a small batch of this sauce, one cup, to keep it fresh for one dinner. Hobby Horseman -
