Breakfast Uji Smoothy

This idea came from a dilemma I had where every morning I'm in too much of a hurry to leave the house that many times I don't get time to grab a bite and I have to buy unhealthy snacks. Porridge is my favourite morning meal but waking up to heat it is too much of a chore (I like to sleep till the very last minute possible, hehe!) So I had a brainwave and said, hey, instead of stressing over reheating porridge, why not just throw the cold porridge into a blender with other things and make a smoothy? Thus the mighty uji smoothy was born and boy, it's delicious and super healthy! It also prevents me from feeling hungry, so I reduce snacking. Make a lot and refrigerate and you can use the whole week.

For uji, boil water as per your amount of flour.

If you're using chiaflax and/or blended beans, don't add at the same time with the other flour, add at the end. Same goes for pumpkin seeds, oats, nuts.

Mix your preferred flour mix with a little water and add to your boiling water. Stir continuously until it boils. Then simmer for around 10-15 minutes depending on the flour.

Add chiaflax and blended beans, bring to the boil, and cook for about five minutes. Dilute with water if need be as chia gets very thick very fast.

Leave to cool then refrigerate. If you don't have a fridge it is also ok to leave it out overnight but don't cook a lot.

For the smoothy, put two cups of the uji into a blender, add all the other ingredients and blend until smooth.
