I made this sweet using crushed tomatoes that's perfect in season. This won a price in a recipe contest in the "tomato" category!

In order to bring out the tomato's sweetness, I held back on the sugar, so you can also as an hors d'oeuvre. Recipe by Torakopantsu

Ingredients

1 serving
  1. 150 ml◇ Canned roughly crushed tomatoes
  2. 1 tbsp◇Lemon juice
  3. 1 tbsp◇Honey
  4. 1pack Gelatin
  5. 40 gramsGranulated sugar
  6. 1 tspKirsch or rum
  7. 100 gramsCream cheese
  8. 100 mlHeavy cream

Cooking Instructions

    Put the ◇ ingredients into a small pot. Heat on low for 2~3 minutes. Soak the gelatin in 2 tablespoons of water, then add it to the pot with the sugar to dissolve. Turn off the heat, add the Kirsch or rum, and mix.

    Crea the cream cheese until soft. Add a little at a time to the cooled mixture from Step 1.

    Whip the heavy cream until slightly thickened, then mix into the mixture from Step 2. Pour into a container and chill in the refrigerator until hardened. Cut into easy-to-eat pieces.

    I tried putting the parfait on top of wafers.

    I used thiese crushed Nagano tomatoes.
