Potato paranthas are Indian breakfast flatbreads made with whole wheat flour, mashed potatoes, spices, herbs & veggies. These flavorful and delicious paranthas are a stable in our house. They are also jam packed with so many veggies including spinach and carrots. They are commonly topped with butter and served with yogurt, pickles, onions & chutney.

Ingredients

  • Ingredients for dough (atta)
  • 2 cupswhole wheat flour (or another flour substitute)
  • 2 tspoil for kneading if required
  • 3/4-1 cupwater - use as needed
  • 1/2 tspchilli powder
  • 1/4 tspgaram masala
  • 1/4 tspturmeric powder
  • 1/2 tspcumin powder
  • 1/4 cupmethi
  • Inchgrated ginger or ginger paste
  • Handfulcoriander leaves
  • 1 cupmix of veggies: Shredded carrots Chopped spinach, broccoli
  • Any other veggies
  • Ingredients for potato filling
  • Peel, mash the potato
  • 1/2 tspturmeric powder
  • 1/4 tspcumin powder
  • 1/4 tspchili powder
  • 1/4 tsppepper
  • 1/4salt

Steps

    Boil, Peel, Mash Potatoes. Mix in spices

    Add flour, add water, oil, add veggies. Mix together

    Knead Dough

  4. 4

    Once completed, cover and leave at room temperature for 30 mins

    Roll dough into balls

    Flatten ball and add potato filling

    Pinch together and roll back into ball

  8. 8

    Rolls out into a circle

    Cook on pan for a few mins each side and add butter when done
