Ingredients

  1. 250 gChicken Breasts
  2. 1/2red onion
  3. 1 clovegarlic
  4. 2large vine tomatoes
  5. 1/2red, green and yellow pepper
  6. 1/2 pintchicken stock
  7. 1small glass Pinot Grigio
  8. 150 gpasta (fusilli)

  1. 1

    Cube red onion. Crush garlic. Slice peppers into thin strips. Peel tomatoes and chop. Cube chicken.

  2. 2

    Cook pasta and cover until remainder finished

  3. 3

    While cooking pasta, brown chicken in a lidded frying pan using 1tbsp olive oil.

  4. 4

    Add onions and garlic and soften.

  5. 5

    Add tomatoes and peppers. Mix into chicken and onions.

  6. 6

    Add the chicken stock and wine. Cover and simmer until liquid reduced by about 2/3rds

  7. 7

    Toss in the pasta to the mix until coated. Serve with lots of black pepper and the remaining bottle of Pinot!
