These are a delight, especially when you're hungover, as they're quite spicy and help alleviate symptoms. Highly recommended during Lent or any day.

In a hot pan, add 2 tablespoons of oil and fry the finely chopped garlic, then shred the marlin and add it to the pan. Lower the stove flame as much as possible.

Chop the onion and add it to the marlin in the pan. Let it cook a bit, stirring occasionally.

Chop the tomato and add it without stirring, spreading it over the dish. Wait a moment for it to start releasing its juices before mixing.

Dice the celery and do the same as with the tomato, but only integrate it after chopping the serrano pepper if you're using it. Otherwise, let it rest for about 3 minutes, then mix everything. Add the soy sauce to give the dish flavor, let it rest a bit without turning off the stove, stirring occasionally. Finally, add the Maggi seasoning and mix. Let it cook until the celery is well cooked, ensuring the dish doesn't dry out, then set aside.

In another clean and dry pan, add the remaining oil, heat it, and lightly fry the tortillas until they soften. Before they are fully fried, make quesadillas with the previous filling. The cheese you use should melt well to seal the contents with the cheese. Brown your quesadillas well on both sides. If you like, you can fry one or more peppers and add a bit of soy sauce and Maggi seasoning.
