Pork Carnitas in the Instant Pot or Pressure Cooker

Cooking Instructions

Set the Instant Pot to sauté and add the lard. Once melted and hot, sear the pork in batches, setting each batch aside in a skillet until all the meat is browned. If using the stovetop, do the same in a pressure cooker.

Once all the pork is seared and set aside, add the quartered onion to the lard and sauté until it starts to break down. Spread the onion across the bottom to make a bed, then add the pork and the rest of the ingredients to the pot.

Turn off sauté mode, close the lid, and set to pressure cook for 50 minutes. If using a stovetop pressure cooker, cook the pork at medium heat under pressure for about 60 to 80 minutes.

You can serve the carnitas as is, or crisp them up for a few minutes in an air fryer, oven, or skillet.

Serve with cilantro, onion, salsa, avocado, or your favorite toppings.

There are other recipes for carnitas, for example slow cooked in chicken broth. I found that the only way to get that authentic Mexican flavor is to use the manteca "lard". Also DO NOT use American style Coca-Cola, it doesn't have the raw sugar the Mexican Coca-Cola has. Hellbound78 -

Somewhat labor intensive, these authentic style Carnitas are SO worth the prep and slow-cook time! I always do the slow-cook of the pork the day before. Day 2 is when I broil/char the pork to serve with my homemade refried beans and warm flour tortillas.Melt-in-your-mouth delicious, and leftovers freeze and reheat very well; so if you're a small household, don't hesitate to make this: cook once, eat 4+ times. Changed this recipe up some, seen this on Pinterest, and the problem with theses instant pot recipes is you really don’t know how it’s going to turn out until you personally make it. You can see there’s to much liquid, the recipe I was following said nothing about having to much liquid......I personally like my pork butt smoked in a smoker for 12-16 hrs but it’s winter.
