Hong Kong Style Baked Pork Chop with Rice 港式焗豬扒飯

Prepare 4 beaten eggs and reserve a small portion for dipping the pork chops

Season the remaining eggs with salt and stir fry with rice until dried

Put the fried rice into an oven dish

Wrap the pork chop in cling film and pound it lightly to about half an inch thickness

Season pork chops with salt and pepper

Dip the pork chops in all-purpose flour, followed by beaten eggs

Pan fry the pork chops for 8 mins with medium high heat and flip them in every one minute

Slice the pork chops into chunks and put them on the rice

Preheat the oven to 230C

Pan fry onion for 2 minutes

Add garlic and mix well

Add 1 TABLEspoon tomato puree and mix well

Add 100mL water, 3 teaspoon sugar and a touch of salt, and mix well

Add tomatoes and cook for 2 minutes until slightly soften

Taste and season the sauce and cook until thicken

Pour the sauce onto the pork chops and rice

Cover the rice with Mozzarella cheese and sprinkle dried oregano on top

Bake the rice in oven for 15 mins
